Well its been a few days since I have been able to blog. I have been busy selling my products at the market. It was fun seeing people I had not seen in a while and just talking to people about my products and yes, talking about goats. I made my cheese again so I thought that I would share how I made it. First I put my kefir grains in my raw goat milk overnight. The next day I strain out the grains and set aside 1/4 cup of kefir. I have 1/2 gallon of fresh raw goat milk. It needs to be about 90 degrees when you add your 1/4 cup kefir to it. Then I added about 3 drops of vegetable rennet and stirred the mixture. I covered it with a cloth and put in a warm oven. I just turned the light on in the oven and left it in there for about 5 hours or so until the whey separated. It will look like the milk is all firm. I pour the whey off the top and then take a big spoon that has tiny holes in it and spoon the cheese in a piece of muslim cloth. I tie two corners together and then the other two corners of the cloth and hang it over a pot to drain. Leave it out on the counter all day or all night. The next day check and see if it is firm enough for you. Some might like their cheese more like cottage cheese and some might like it like cream cheese. Its up to you. If you want it firmer, let it hang longer. At this point I add a little salt and mix it in and then add my herbs of choice. Its now ready to eat. Yummy. I refrigerate it now . Its also good plain with honey on crackers.
I also wanted to share a sandwich that I had at the Florence Market when I was there selling my products. I saw some people cooking across from my tent and decided to go and get something to eat. They were making these sandwiches that were delicious. You take thick sourdough bread and put it in a pan with real butter. Let the bread brown a tiny bit on both sides. Put some Amish butter cheese on one side with a drizzle of honey and a tomato slice with a couple of basil leaves on other side. Put together and eat. Its amazing. You can use Montery Jack cheese if you don't have the other. You can buy the good cheese and butter from Orvis Farms. Guess thats all for now.... See ya soon
