Yes I remember I told you I was gonna put up the cheese recipe but I am not today because I make it without measuring. I will measure next time so I can be exact before I put it up. This bread recipe it good with kefir so I will do that today. To change the subject for a minute, I went to the Florence Market uptown today and it had a good turnout. Thank you for the ones that supported me in that was wonderful!!! They had sour dough bread grilled in butter. They put cheese, tomato and basil on it and drizzled with honey. Oh my goodness. I came home with the cheese and butter to make my own.If you go to the market check them out.
Now for the kefir bread. First you make put your kefir grains in milk. Its supposed to be 5 times as much milk as grains. If you have too many grains it will be too sour. So add milk if its too sour. Leave in a jar overnight on the counter then strain the grains out and use the milk for bread. Here is the recipe.
3 cups of flour
3 cups of kefir
Mix these together well and cover with plastic in glass bowl. Let sit 12 to 24 hours in a warm place. It should get liquidy and bubbly. Mix the dough well and add 1.5 tsp baking soda, 1.5 tbsp of sugar, 2 tbs melted butter or coconut oil.,, 3 cups flour. Mix this and knead in enough flour to make a soft dough. Divide the dough in two parts and place in well greased pans. Let rise in warm place. When dough rises to top the bake in a 350 degrees oven for about 30 minutes or could take a little longer. I put tinfoil on mine for a while then take it off at end. If not your bread will be crusty. If you like that leave it off. Enjoy with some good butter...... Until next time......
